OUR STORY

The idea of pressing juices came from longing for the flavours of childhood. Varieties such as Antonovka or Croncels were common and always present in the autumn-winter season on our tables. With time, however, they were replaced by new varieties that began to dominate over modern orchards and in our kitchens.

Nowadays, buying apples of a noble, old variety is a mission impossible, unless you visit an eco-bazaar or find an exquisite greengrocery. It is a pity, because the variety of flavours and aromas of heritage varieties cannot be overestimated. Until recently Polish countryside was dotted with orchards full of different species of fruit trees. Yet, the dominance of modern varieties of apple results in decreasing share of traditional orchards. With this, the landscape of the countryside changes, and we lose irretrievably its traditional character, access to great fruits, but also local ecosystems, which constitute the biodiversity of these places, providing a sanctuary for many species of plants and animals.

For the purpose of our Project, we created a brand Rezerwat Jablek (Apple Reserve), which fully reflects the nature of what we do, i.e. we keep looking for old orchards with noble varieties of apples, and then collect them from huge, spreading, often semi-wild trees. This is the beginning of our Project, created by lovers of these exceptional fruit.
